Recipes – Paleo Slow Cooker Pork Loin

Well the nights are drawing in and the days are certainly getting colder,  which makes me think about comfort food. I love walking into the kitchen after a crazily busy day, putting down my laptop bag, keys and phone and relaxing to the smell of gorgeous food cooked and ready to eat.  With this in mind, I remembered  my slow cooker that has been in its box, in the cupboard under the stairs for nearly two years. I started looking on the internet for some good recipes to try. One stood out that sounded delicious – Paleo Pork Loin, we already had most of the ingredients which obviously helps so I just needed to add a few items to our weekly food delivery.  Once I had all the ingredients I was desperate to get started, I managed to chop all the ingredients up and put them in the slow cooker before the kids woke up, this was very quick and easy to do, then the last task was to select the slow cooking time and leave it until I returned 8 hours later. I must say this recipe is full of beautiful mouth watering flavours, can be served with rice, couscous or sweet potato. My husband loved it and even the kids tried it.

The Easiest Pancake Recipe

We love a good pancake, but unfortunately sometimes there isn’t enough hours in the day to make a complicated recipe and get all the ingredients, so after many hours (OK a few emails) we have found the easiest and yummiest recipe out there ( full details onhttp://www.jamieoliver.com), tested on a fussy 2 year old, tired 4 year old and 44 year old and i’m pleased to say went down a storm with everyone asking for more, with a few tears thrown in (by the 44 year old) when they realised that all the batter had gone. Children wont even notice the pear in them, as they just add a lovely sweet taste. The favourite topping requests were -

- Bananna and toffee sauce

- Mango and papaya with some greek yogurt and honey

- Peanut butter and strawberry jam

- Lemon juice and sugar

These are the fluffiest, loveliest American-style pancakes ever. My girls ask me for them all the time and I get big brownie points whenever I make them. The recipe couldn’t be easier to remember and what’s brilliant about it is that it works like a charm every single time. You can have fun with it by switching up the fruit; strawberries, apples, blackberries, blueberries and bananas are all delicious in these pancakes so feel free to swap out the pears for any of those. The batter will keep as good as gold in the fridge for a day or two if you have any left over.

1. Put the flour, milk,eggand salt in a mixing bowl and whisk until smooth. Once combined, grate in the pear, core and all then stir it through with a spoon.
2. Put a large pan on a medium heat and add a knob of butter. Once that melts, add the batter, a spoonful at a time to the hot pan. You’ll need to cook them in batches, cooking them for a few minutes until golden on the bottom, then flipping over and cooking for a few minutes more until they’re done.
3. When they are golden and fluffy, serve them right away with a dollop of natural yoghurt and some runny honey drizzled all over the top.

TIP: If you sweeten the batter, thicken it with just a little more flour then pour them into a Yorkshire pudding or muffin tin as they also make the most delicious muffins.
